Head Butcher

The Head Butcher will thrive in a fast-paced, dynamic environment displaying excellent operational knowledge and is highly motivated and results-driven.

Responsibilities

  • Manage the Meat & Fish Departments so they are regarded as ‘Best in class’, with high levels of customer experience.
  • Drive sales at the Meat and Fish departments through innovation, development and creativity.
  • To generate loyalty by giving each and every customer an exceptional experience.
  • Manage scanning targets on a weekly basis & P&L results monthly. Action as necessary.
  • Continuously work to reduce waste through better ordering.
  • Monthly review of pricing and product file with responsibility for product selection and supplier selection and margin and price setting (with the Purchasing team).
  • Manage payroll targets on a weekly basis and action where necessary.
  • Ensuring that your department adheres to all legal requirements including health and safety, pricing, working time directives and fire. Maintain excellent house-keeping standards from cleaning to maintenance etc.
  • Developing key staff and ensuring all staff are educated on new / seasonal / special products. Coordinating supplier tastings and visits to encourage same.
  • Responsible for all of your equipment, inventory and packaging requirements.

The Person

  • A deep passion for and knowledge of food
  • Warm, vibrant, enthusiastic and welcoming to guests, and passionate about creating memorable experiences.
  • Managerial experience in a butchery or as a chef.
  • Outstanding interpersonal and communication skills, with a warm and approachable manner.
  • Excellent organisational abilities, with keen attention to detail and the capability to manage multiple tasks and priorities simultaneously.
  • You’re passionate about what you do and bring your authentic self to work everyday
  • You’re innovative in your approach to your role and not afraid to think outside the box
  • You’re an empathetic leader, with the ability to inspire others
  • You combine analytical and methodical thinking with high attention to detail and a solution-focused approach
  • You have a high standard of integrity, with sound judgement and a commitment to excellence
